New Rules Mandate Pit Stop in Freezer For Raw Fish

NEW YORK (AP) —

Starting August, any fish served raw in a New York City restaurant will have to make a pit stop in a freezer first to be frozen, the Department of Health and Mental Hygiene announced.

The regulations are in line with FDA recommendations. Many chefs say they already freeze their fish to guard against intestinal parasites.
